Cashel Blue Organic

Cashel Blue is a unique Irish cheese with layers of flavour. It's sumptuously rounded with creamy, savoury blue notes, a light salt edge and subtle hints of spice. When young, it offers a velvet texture and a primrose hue. As it matures, the flavour deepens, offering a truly rewarding, melt in the mouth experience.
The Taste: It shares the same rounded, creamy, savoury blue notes as the original. It’s a rewarding taste experience for those who champion natural goodness.

Crozier Blue

Crafted from ewe's milk right here in our dairy, Crozier Blue is a beautifully smooth and comforting taste experience. It's often more acidic when young, making it perfect for pairing with super-zingy Rieslings. Like its sibling, it's celebrated internationally and highly esteemed by chefs. We recommend Crozier Blue when you pass the port.
The Taste: Crozier Blue has a rich, full and well-rounded flavour. It is gently salty with a distinctly rich creamy texture, offset by a touch of spice.

Reserve Cheddar

This is our deeply soulful Reserve Cheddaris a true labor of time and patience. Crafted from grass-fed cow’s milk and tucked away in our maturing rooms, this cheese has developed a bold, complex character that demands a moment of your time. It’s firm yet creamy, featuring those tiny, crunchy crystals that are the hallmark of a perfectly aged reserve. It’s the ultimate partner for a glass of robust Cabernet Sauvignon or a crisp, dry cider and a dollop of red onion marmalade.
The Taste: Intensely savoury with a nutty toasted sweetness and a sharp clean finish. It offers a firm texture with delightful "crunchy" crystals.

Shepherd's Store

This is our wonderful, naturally creamy sheep's milk cheese, a true delight for the adventurous palate. Crafted in small batches at our dairy, this cheese has a lovely, smooth character, offering a more subtle and lush taste than traditional blues. It makes for great company with a glass of Pinot Gris and a slice of Rye bread.
The Taste: Naturally creamy with a more subtle and gentle spice profile compared to the blues. It offers a lush, smooth character, very moreish.

Toma No.5

This is our wonderful, semi-hard cow’s milk cheese, a true delight for those who appreciate the quiet complexity of traditional farmhouse craft. Crafted in small batches at our dairy using our own Friesian milk, Toma No. 5 has a lovely, supple character, offering a more mellow and buttery taste than our classic blues. It is a versatile companion on any board, making for great company with a glass of crisp Chardonnay or a nutty Craft Ale and a handful of orchard fruits.
The Taste: Naturally buttery with a gentle, earthy sweetness. It offers a smooth, elastic texture that melts beautifully on the tongue, truly moreish.
