Toma No. 5 is a smooth, friendly, rustic Irish Farmhouse Cheese.
Bearing a natural grey edible coat, the texture is semi-firm, while the taste is at once fresh with a surprising creamy milkiness . Subtle hints of button mushrooms are distinct from the rind.
Made with 100% Tipperary lush milk- Toma No. 5, by nature of its origin, evolves from richer milk than it’s French and Italian cousins.
Like its sister cheeses, Cashel Blue and Crozier Blue, mould plays a part, the distinctive external grey appearance, comes from Penicillium Gris, which plays a key flavour role, evolving with slow intent as the cheese patiently develops.
It is a tribute to the type of cheese Sergio Furno grew up eating in northern Italy and to the French Alps, where Sergio and Sarah fell in love with cheese, ultimately taking the decision to return to Ireland and to take on the reins of the family business.
Perfect for a guilt free snack- Enjoy it on its own or with fruit- excellent with a local apple.
Drink with- A lighter red- Pinot Noir or Gamay or an unoaked Chardonnay. Or try it with a traditional Irish style Red Ale, Smithwick’s for example

Made in a traditional style with animal rennet, these baby wheels of cheese weighing only about 750g are typically aged for between 6 to 10 weeks
