This board is a tribute to the craft of our dairy and the distinct personalities of our cheeses. Designed for sharing, whether it’s a quiet evening by the fire or a festive gathering, this is the ultimate way to experience the Cashel Blue story, one slice at a time.

Ingredients:

  • Cashel Blue: The centerpiece, rich and tangy.

  • Shepherd’s Store: Sheep’s milk elegance with a gentle spice.

  • The Crunch: Rye bread slices, charcoal crackers, and water biscuits.

  • The Sweet: Fresh figs (halved), honeycomb, and a small dish of balsamic reduction or dark honey.

  • The Earth: Raw walnuts, toasted hazelnuts, and fresh rosemary/thyme sprigs.

  • The Zing: Pickled golden beets or thin-sliced lemon preserves.

Step-by-step:

Prep time: 15 minutes | Serves: 4–6 | Character: Rustic & Indulgent

1. Temper the Stars Remove your Cashel Blue and Shepherd’s Store from the fridge at least 60 minutes before serving. This is vital; they need to reach room temperature to unlock its texture and aroma.

2. Anchor the Board Place your largest wedge (the Blue) in the center-top. Position the the others at opposite corners. Leave the rinds on—they tell the story of the dairy.

3. Create the “Paths” Arrange your crackers and rye bread in flowing lines between the cheeses. Use the charcoal crackers next to the coloured cheese to create a striking visual contrast.

4. Add the Harvest Layers Nestle the halved figs and walnuts in the gaps. Place the honeycomb on a small separate plate or directly on the board near the Shepherd’s Store, as the floral honey beautifully complements sheep’s milk.

5. The Final Flourish Tuck fresh rosemary and thyme under the edges of the cheese wedges. This adds a “just-picked” farmhouse scent to the board as guests lean in.
