We look forward to exhibiting, for the 7th time, at the iconic French Salon du Fromage held at the Porte de Versailles, Paris, for the 7th time. With 290 cheese exhibitors representing 15 different countries around the world, we are proud to fly the flag for Ireland. In 2012 we started direct export to the French market, it wasn’t easy to break into a taste landscape with so much great cheese. Cashel Blue has earnt her place in independent cheese shops across France. Recognised for her creaminess, and approachability, she is not as strong as traditional French blues. Cheese-making today is dominated by multinational larger dairy corporations, the French have great respect for Cashel Blue’s provenance-family production- local milk- and approach to maturation, with less than 5% of production in France today being independently family owned and made.
