It all started in 1984 in our farmhouse kitchen Jane and Louis had a simple idea to make an individual cheese from their herds milk. Since then we stand for the crafted, the true and the time given.

Today, our second-generation cheesemakers continue that tradition, crafting a modern Irish classic.
